Ways to Make Healthier Chocolate Chip Cookies

Is it possible to occasionally indulge in healthy chocolate chip cookies that taste good? Yes, and I have gathered a dozen recipes for healthier chocolate chip cookies to prove it.
Many "healthy cookies" don't taste very good and, in my opinion, are not worth the calories.
After a lifetime of weight struggles, I have learned that I would rather have a small tasty cookie every now and again than a bunch of tasteless substitutes, even if they are purported to be healthy. I am a survivor of the "Snackwells" era, where I somehow was convinced I could eat boxes of these tasteless wonders without guilt. I only managed to gain weight while getting zero satisfaction!
Now, I am older and a bit wiser. I know what works for me - real food in healthy balance. And when it comes to indulgences, I am on the lookout for treats that can satisfy my taste buds and my desire for wholesome goodness.

It is important to remember that a chocolate chip cookie is an indulgence to be enjoyed sparingly. It will never be a truly healthy food, and can only be made so healthful, before it begins to lose its lusciousness.
How to Make Chocolate Chip Cookies Healthier?
There are lots of things you can do to lighten cookies and boost their nutrition. Here are a few of my favorites:
  • Use less fat or a healthier fat
  • Substitute part of the fat with applesauce or yogurt
  • Replace all or some of the flour with whole wheat or another whole grain flour
  • Add some oats, nuts, seeds, and/or dried fruit
  • Add some ground flaxseed
  • Use dark chocolate chips
  • Replace all or part of the sugar with a natural sweetener such as honey, maple syrup, brown rice syrup, or sucanat (dehydrated cane juice).
  • Add a healthy fruit or vegetable such as shredded zucchini, mashed bananas, or pumpkin puree.

Chocolate Chip Cookies - How to Make Them Chewier

Chocolate chip cookies are so popular. People are used to the Toll House cookie recipe. This one is so much better. The secret to this recipe's success in making them chewy is melted butter! This melted butter, combined with the softened butter and the rest of the ingredients give this cookie dough a crispness on the outside and chewy cookie on the inside that makes it a huge hit.

Ice cream scoops are important to use when making this chocolate chip cookie recipe. Ice cream scoops allow you to control the portion size which makes all of your cookies bake the same size evenly and allows you to be able to stack them to make cookie towers (wrap with plastic wrap and add a bow to give as a gift).

This recipe can be made ahead -- shaped into logs (use parchment paper instead of waxed paper), baked and frozen (don't worry about using separator wax sheets, they will pop apart when thawed) or put into decorative buckets and given as gifts for your family and friends to bake when they want (attach baking instructions). Let your imagination be your guide. You'll thank me later when you get the compliments. Enjoy!

Chewy Chocolate Chip Cookie Recipe
(recipe can be easily doubled)

1/2 cup unsalted butter, melted and cooled a little bit (do not mix in while it's hot)
1/2 cup unsalted butter, softened
1-1/2 cups brown sugar (packed well into measuring cup)
1/4 cup white sugar
2 large eggs
2-1/2 tsp. pure vanilla extract (or you could substitute 2-1/2 tsp. Bailey's Irish Cream for a different flavor)
2 cups + 2 T all-purpose flour
1 tsp. baking soda
1/4 tsp. salt
3 cups semi-sweet chocolate chips (you would substitute milk chocolate chips if you like those better)

Preheat oven to 350 degrees before putting together ingredients. Use a hand mixer or heavy duty mixer to cream the softened butter, brown sugar and white sugar together until creamy. Slowly add the melted butter a little at a time and blend well until thickened. Add the eggs, one at a time, until blended well, scraping down the sides of the bowl after each addition. Add the vanilla extract or Bailey's Irish Cream. Scrape down the sides of the bowl to make sure it's completely blended together. Set aside. In another bowl, sift (or use a whisk to aerate), the flour, baking soda and salt until completely blended together. Using a large spoon, sprinkle the flour mixture slowly into the butter/sugar mixture until it is all incorporated. Scrape down the sides to make sure that everything is blended well. Add the chocolate chips a little at a time until blended in. Use an ice cream scoop to portion out your dough onto a parchment covered cookie sheet. The cooking time will vary according to your oven.

When baking this recipe as regular cookies, always start with a parchment covered cookie sheet on the middle (not top) rack. Once the edges start to brown, move the cookie sheet to the top rack and then put another pan of cookies onto the middle rack. ALWAYS line the cookie sheet with parchment paper. This paper allows cookies to pop off the sheet and gives them all a uniform golden brown on the bottom. For the second batch, turn the parchment paper over and put on your cooled cookie sheet.

Custom Chocolate Chip Cookies - This recipe is so easy to customize -- you can take one batch of cookie dough - once you blend in the flour, you can measure out a combination of chocolate chips, toffee bits, peanut butter chips, nuts or anything else you like to mix into your dough. You can also divide the dough up into three or four parts and then add different ingredients to each part to customize them for your family and friends.

Monster-sized Chocolate Chip Cookies - The monster sized versions of the recipe are always a hit with men and women (use the largest ice cream scoop you can find). Bake no more than 6 on a cookie sheet using the method above to start baking on the lower shelf and then continuing on the top shelf once the bottom is brown. They can be put in a 10" cake box or wrapped in plastic bags tied with ribbon to give as gifts.

Individual Chocolate Chip Cookie Cakes - Individual chocolate chip cookie cakes can be made using a 6" round, square or heart-shaped cake pan. Follow the instructions listed below.

Stacked Chocolate Chip Cookie Cake - What do you gift a person who loves chocolate chip cookies for their birthday? Make them a stacked chocolate chip cookie cake, and they will LOVE you! Double the recipe above and use regular cake pans sprayed with butter spray to make chocolate chip cookie cakes (I've used 6" round, 8" round and a 10" round to make a stacked cookie cake). You can use whatever sizes you have on hand. Use enough cookie batter so that the cake pan is half full. Don't forget to use spray butter inside your cake pan before putting in the cookie dough. These cookie cakes will bake at 350 degrees until done. You have to insert a cake tester inside to make sure they're done. They are usually golden brown when done. You can shake them out of the cake pan when cooled. For your own sanity, you can also put a parchment circle in the bottom of the cake pan.

Decorated Chocolate Chip Cookie Cakes - Chocolate chip cookie cakes can be decorated using pre-made frosting and decorations featured in the baking aisle at your local grocery store. This is a perfect project for little kids.

Chocolate Chip Cookies - How We Love America's Favorite Cookie!

Don't you love it when your kids are getting ready for bed and you hear, "By the way Mom - our class party is tomorrow, and I signed up for three dozen chocolate chip cookies!"

Cookies are America's most popular dessert, and for all those late night, emergency cookie baking sessions, or almost any cookie occasion, about half the cookies baked are chocolate chip.

Did you ever wonder what chocolate chip cookies and President John F. Kennedy have in common? Perhaps not, but here are some historical chocolate chip cookie tidbits.

There are an estimated 2,000 varieties of this popular cookie, from chocolate chip banana to white chocolate chip raspberry, but the most popular is the Toll House cookie recipe seen on the back of every Nestlé chocolate chip package.

In 1930, Ruth Wakefield and her husband, Kenneth, established the Toll House Inn, near Boston, Massachusetts. Their tourist lodge was housed in a building (circa 1709) where, at one time, travelers paid their tolls, changed horses and enjoyed home-cooked meals.

The Toll House Inn was well-known for Ruth's cooking, especially her desserts. She often sent travelers on their way with a plate of her delicious cookies. One otherwise uneventful day in 1937, Ruth added small chunks of a Nestlé's Semisweet Yellow Label Chocolate bar to her butter cookie dough.

Results? Instant success!

The story goes that Ruth received a lifetime supply of chocolate in exchange for her recipe, which Nestle' printed on the back of their semisweet chocolate bar packages. The cookie recipe was so popular that Nestlé began marketing chocolate chips to be used especially for cookies.

Over the years, the popular Toll House Inn included many well-known guests, including - guess who? - President John F. Kennedy.

Almost a century after Ruth dropped that first piece of chocolate into her cookies, every bag of Nestle chocolate chips in North America continues to have Wakefield's original, Toll House recipe printed on the back.

Just like Ruth's recipe, all basic chocolate chip recipes call for flour, sugar, butter or margarine, baking powder and/or baking soda, eggs, vanilla, and chocolate chips. The taste and texture varies with recipe. Some chocolate chip cookies bake puffy and others flat. The easiest to decorate are flat.

Decorate chocolate chip cookies? Yes, these are especially unique for Jenny and Jeff's school parties - that is, if you aren't too tired after your all night baking session! Chocolate chip cookies are tasty enough without icing, but a little decoration will make you the most popular mom in the class!

Decorated Chocolate Chip Pan Cookie

Instead of the more time-consuming individual cookies, the chocolate chip pan cookie can be a life-saver when you've awakened at midnight, realizing you forgot to bake those cookies for tomorrow's first grade celebration of "National Play Doh Day."

After you bake the cookie, pipe on a balloon (royal icing border filled in with gel icings) and message like "Happy Imagining!"

Chocolate Chip Cookie Bouquets

While chocolate chip cookies don't lend themselves to the fancier, polished cookie bouquets, they can be very cute and cheerful - exactly the thing for 85-year-old Aunt Myrna, who married her yoga instructor, or Cousin Jim who just graduated from bungee-jumping class - with flying colors!

Here's one idea:

Cookies and Milk Bouquet

1 batch of Toll House chocolate chip cookie dough

Lollipop sticks (rolled paper, not plastic) of varying heights

Royal icing

Preheat oven to 375° F. Roll cookie dough into 2-inch balls. Arrange four balls on an ungreased cookie sheet. Insert a lollipop stick into each ball. Press dough down slightly.

Bake for 13 to 15 minutes or until the edges of the cookies are crisp. Cool on baking sheet for 1 minute; remove to wire racks to cool completely.

Once cooled (about 20 minutes), decorate your cookies with a decorating bag and royal icing. Use icing sparingly so as not to detract from the wholesome cookie taste. For the "cookies and milk" theme, you might want to add white icing milk moustaches.

After the icing hardens, wrap each cookie in cellophane and tie with a ribbon. Arrange in a mug (for the milk!) that matches your theme.
